  • 3 tablespoons flour

  • ½ teaspoon black pepper
  • ¾ cup panko breadcrumbs
  • ¼ cup grated parmesan cheese
  • 1 large zucchini (sliced ⅓-inch thick)

Instructions

  1. In a shallow dish, whisk together the eggs, flour, salt, and black pepper until well combined.
  2. In another shallow dish, mix panko breadcrumbs with grated parmesan cheese.
  3. Dip each zucchini slice into the egg mixture first, letting excess drip off, then coat with the breadcrumb mixture.
  4. Preheat the air fryer to 400°F and arrange half of the coated slices in a single layer in the basket. Lightly spray with oil.
  5. Air fry for 5-7 minutes, flip slices, spray again, and cook for another 5-7 minutes until golden brown and crispy. Repeat with remaining slices.
