  • 8 day-old croissants
  • 1 cup almond flour
  • 2 tablespoons all-purpose flour
  • ½ teaspoon salt
  • ½ cup granulated sugar
  • ½ cup unsalted butter, room temperature
  • ½ teaspoon almond extract
  • 2 eggs, room temperature
  • 1 cup water
  • ¼ cup granulated sugar (for syrup)
  • ¼ cup sliced almonds (optional)
  • ¼ cup powdered sugar (optional)

Instructions

  1. Preheat the oven to 350°F (177°C) and line baking sheets with parchment paper.
  2. In a saucepan, combine water and sugar; simmer until dissolved, then stir in vanilla extract and cool.
  3. In a stand mixer, mix almond flour, all-purpose flour, salt, and sugar. Gradually add room temperature butter, eggs, and almond extract until fluffy.
  4. Slice each croissant in half, brush inside with syrup, fill with almond mixture, replace tops, brush again with syrup, and sprinkle with almonds.
  5. Bake for 15-18 minutes until golden brown; cool slightly before dusting with powdered sugar.
