  • 3/4 cup sugar
  • 1/3 cup vegetable oil
  • 2 tablespoons applesauce
  • 1 teaspoon vanilla extract
  • 2 cups finely chopped peeled apples
  • 1 cup chopped toasted pecans
  • Additional sugar and cinnamon for topping

Instructions

  1. Preheat your oven to 350°F and grease your loaf pan.
  2. In a medium bowl, whisk together the flour, cinnamon, nutmeg, salt, and baking powder; set aside.
  3. In a large bowl, combine the eggs, sugar, vegetable oil, applesauce, and vanilla extract until blended.

  5. In a small bowl, mix the remaining pecans with sugar and cinnamon; sprinkle over the batter in the loaf pan.
  6. Bake for 55–60 minutes or until a toothpick inserted into the center comes out clean. Let cool for 10–15 minutes before transferring to a cooling rack.
