  • 2 tablespoons apple cider vinegar
  • 2 tablespoons Dijon mustard
  • 2 tablespoons packed light brown sugar
  • 1 tablespoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 bay leaves
  • 2 tablespoons olive oil
  • 2 teaspoons salt, or to taste
  • 1 teaspoon black pepper, or to taste
  • 2 tablespoons all-purpose flour
  • 2 tablespoons water

Instructions

  1. Pat the beef shoulder dry and season generously with salt and pepper.
  2. In a Dutch oven, heat olive oil over medium-high heat; sear the beef on all sides until browned, then set aside.
  3. Sauté onions in the same pot until softened; add apples and garlic, cooking until slightly softened.
