  • 1/3 cup granulated sugar
  • ½ cup lightly packed brown sugar
  • 1/3 cup light olive oil
  • ¼ cup sour cream
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1½ teaspoons ground cinnamon
  • Pinch allspice
  • 1/4 teaspoon coarse kosher salt
  • 1¾ cups all-purpose flour
  • 1 tablespoon butter, at cool room temperature
  • ¼ cup granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F. Grease a 9” square baking dish and line it with parchment paper.
  2. In a large sauté pan, boil fresh apple cider until reduced by half (about 5 minutes). Whisk in diced butter until melted.
  3. In a medium bowl, whisk together eggs, sugars, olive oil, sour cream, baking powder, baking soda, ground cinnamon, allspice, and salt. Gradually mix in the hot cider mixture.
  4. Fold in all-purpose flour until just combined to avoid overmixing.
  5. Pour batter into the prepared dish and bake for 22–25 minutes or until golden brown.
  6. Allow cooling briefly before topping with melted butter and sprinkling cinnamon sugar on top.
