  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 2 medium apples, peeled, cored, and diced

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
  3. In a large bowl, cream the softened butter and sugar until light and fluffy. Add eggs one at a time, then stir in vanilla.
  4. Gradually mix in the dry ingredients alternating with the sour cream until just combined. Fold in diced apples gently.
  5. Pour half the batter into the prepared pan. Mix remaining sugar with cinnamon and sprinkle half over the batter. Add remaining batter on top and finish with the rest of the cinnamon-sugar mixture.
