  • 1 ½ cups diced apples (Granny Smith or Honeycrisp)

Instructions

  1. Preheat the oven to 400°F (200°C) and prepare a muffin tin with paper liners.
  2. In a small bowl, combine flour, brown sugar, granulated sugar, and cinnamon for the crumble topping. Mix in melted butter until clumps form.
  3. In a medium bowl, whisk together the dry ingredients: flour, baking powder, salt, and cinnamon.
  4. In a large bowl, cream together the sugars and butter until light and fluffy. Add eggs, sour cream, and vanilla; mix until smooth.
  5. Gradually add half of the dry ingredients followed by milk; mix just to combine. Gently fold in remaining dry mixture and diced apples.
  6. Fill muffin cups three-quarters full with batter and top with crumble mixture.
  7. Bake for about 20 minutes or until a toothpick comes out clean.
