  • 1/4 onion (quartered)
  • 1 garlic clove
  • 1 cup water
  • 2 cups long-grain white rice
  • 1/8 cup olive oil
  • 1/4 onion (finely diced)
  • 1 garlic clove (finely minced)
  • 1 tbsp chicken bouillon
  • Pinch of whole cumin
  • 1 1/2 cups water

Instructions

  1. In a pot, boil tomatoes, onion, and garlic in water until softened; blend until smooth.
  2. Heat olive oil in a large pot over medium heat; add rice and toast for about 5 minutes.
  3. Stir in finely diced onion; continue to toast until golden.
  4. Add minced garlic, chicken bouillon, cumin, the blended tomato sauce, and water; stir well.
  5. Cover and cook on medium heat for 12 minutes; let rest covered for an additional 5 minutes before fluffing with a fork.
