Ingredients

  • Kale (1-2 bunches, center ribs removed and torn into small pieces)
  • Delicata squash (1, de-seeded and cut into half moons)
  • Cooked farro (1 cup)
  • Soft goat cheese (4 ounces)
  • Pomegranate arils (about 1 cup)
  • Olive oil (4 tablespoons total)
  • Apple cider vinegar (2 tablespoons)
  • Pure maple syrup (1 tablespoon)
  • Garlic clove (1, pressed or finely minced)
  • Chili powder (3/4 teaspoon total)
  • Salt (to taste)
  • Pepper (to taste)
  • Smoked paprika (1/4 teaspoon)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss sliced delicata squash in 2 tablespoons of olive oil, salt, pepper, and 1/2 teaspoon of chili powder; roast on a baking sheet for 15 minutes until golden.
