Kale (1-2 bunches, center ribs removed and torn into small pieces)
Delicata squash (1, de-seeded and cut into half moons)
Cooked farro (1 cup)
Soft goat cheese (4 ounces)
Pomegranate arils (about 1 cup)
Olive oil (4 tablespoons total)
Apple cider vinegar (2 tablespoons)
Pure maple syrup (1 tablespoon)
Garlic clove (1, pressed or finely minced)
Chili powder (3/4 teaspoon total)
Salt (to taste)
Pepper (to taste)
Smoked paprika (1/4 teaspoon)
Instructions
Preheat your oven to 400°F (200°C).
Toss sliced delicata squash in 2 tablespoons of olive oil, salt, pepper, and 1/2 teaspoon of chili powder; roast on a baking sheet for 15 minutes until golden.
