  • 1 teaspoon extra virgin olive oil
  • 6 whole scallions (sliced)
  • 16 ounces frozen corn kernels
  • 1 teaspoon Tajin or similar seasoning
  • 4 ounces cream cheese
  • ¼ cup light sour cream
  • 7 ounces Cotija cheese (grated)
  • Chopped fresh cilantro (for garnish)

Instructions

  1. Preheat your oven to 350°F.
  2. In an ovenproof skillet, heat olive oil over medium heat. Sauté the white and light-green parts of scallions with salt until softened.
  3. Add the corn and seasoning; sauté until the corn is tender.
  4. Stir in cream cheese until smooth, then mix in sour cream and half of the Cotija cheese.
  5. Bake for 10-12 minutes until bubbly, then broil for another 2-3 minutes after sprinkling remaining cheese on top.
  6. Garnish with reserved scallion greens and cilantro before serving.
