  • 2 large baking potatoes
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 tsp black pepper
  • 0.5 tsp red chili flakes
  • 200g block of feta cheese
  • 1 head of garlic (top cut off)
  • 1 lemon (quartered)
  • 1 tbsp honey
  • 20g fresh basil

Instructions

  1. Preheat your oven to 200C | 390F.
  2. Wash and cube the baking potatoes. Par-boil in boiling water for 6-8 minutes, then drain and steam dry.
  3. In a baking dish, combine par-boiled potatoes with olive oil and seasonings: thyme, oregano, salt, pepper, and red chili flakes.
  4. Roast in the oven for about 30-40 minutes until golden brown.
  5. Add the feta cheese in the center along with halved lemon pieces and roasted garlic (squeezed out) for additional flavor.
  6. Return to the oven for another 15 minutes.
  7. Mix in more lemon juice and fresh basil before drizzling with honey.
  8. Serve warm and enjoy!
