  • 1/2 tsp salt (divided)
  • Avocado oil spray (or 1 to 2 tsp liquid oil)
  • 1 tsp smoked paprika
  • 1/4 tsp ground pepper
  • Additional salt to taste

Instructions

  1. Preheat your oven to 225°F (107°C) and line two baking sheets with parchment paper.
  2. Slice the zucchini into 1/8 inch thick rounds using a mandolin slicer or food processor.
  3. Arrange the slices in a colander, sprinkling with about 1/4 tsp of salt between layers. Let drain for one hour.
  4. Pat the drained slices dry with tea towels and spread them out on the baking sheets without overlap.
  5. Lightly spray with avocado oil or brush with liquid oil, then sprinkle evenly with the seasoning mixture of smoked paprika, ground pepper, and remaining salt.
  6. Bake for 70 to 90 minutes, rotating sheets halfway through until they are crisp and lightly browned. Keep an eye on them towards the end to avoid burning.
  7. Serve immediately or store in an airtight container at room temperature for up to three days.
