  • 1 medium cucumber (seeded and thinly sliced)
  • 4 oz. feta cheese (crumbled)
  • 1/4 cup fresh dill (roughly chopped)
  • 1 tablespoon lemon juice
  • 1/2 teaspoon kosher salt
  • 3 tablespoons extra-virgin olive oil

Instructions

  1. In a small bowl, whisk together the lemon juice and kosher salt until dissolved. Gradually drizzle in the olive oil while whisking to create an emulsified dressing.
  2. In a large mixing bowl, combine the sliced beets and half of the dressing. Mix gently until well coated.
  3. Just before serving, add the sliced cucumber, crumbled feta cheese, freshly chopped dill, and the remaining dressing to the bowl with beets. Toss carefully until combined.
