  • Zest and juice of 1 lemon
  • 2 tbsp honey
  • 1 tbsp soy sauce
  • 1 cup jasmine or basmati rice
  • 1 cup coconut milk
  • 1/2 cup diced pineapple
  • 1/2 cup diced mango
  • 1/4 cup diced red onion
  • 1 tbsp lime juice
  • Fresh cilantro (chopped)
  • Salt & pepper to taste
  • 1/4 cup mayonnaise
  • 12 tsp sriracha
  • 1 tsp lime juice for spicy mayo
  • 1/2 cup water
  • 1/2 tsp salt for rice
  • 1 tbsp olive oil

Instructions

  1. Rinse rice under cold water until clear; combine with coconut milk, water, and salt in a saucepan. Bring to a boil, reduce heat, cover, and simmer for 15 minutes.
  2. In a small bowl, whisk together ginger, lemon zest, juice, honey, and soy sauce to make the glaze.
  3. Heat olive oil in a skillet over medium heat; season chicken with salt and pepper. Cook until golden brown on one side (4–5 minutes), then flip.
  4. Pour glaze over chicken; cook for another 2–3 minutes until thickened.
  5. For the salsa, mix diced pineapple, mango, red onion, lime juice in a bowl; season with salt and pepper.
  6. Prepare spicy mayo by whisking together mayonnaise, sriracha, and lime juice.
  7. Serve coconut rice topped with chicken and salsa; drizzle spicy mayo on top.
