  • 8 oz cream cheese (room temperature)
  • 1/4 cup granulated sugar (for cream cheese swirl)
  • 1 large egg yolk (for cream cheese swirl)
  • 2 teaspoons vanilla extract (for cream cheese swirl)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin pan with paper baking cups.
  2. In a medium bowl, whisk together flour, pumpkin spice, baking soda, and salt.
  3. In a large bowl, mix pumpkin puree, granulated sugar, brown sugar until smooth. Beat in eggs, followed by vegetable oil and vanilla extract. Gradually mix in dry ingredients until just combined.
