  • 1 ½ pounds sweet potatoes, cut into ½” cubes
  • 4 Tablespoons olive oil (divided)
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon ground coriander
  • 1 teaspoon sea salt
  • ¼ teaspoon pepper
  • 1 ½ cups green pepper, cut into 1" pieces
  • 1 cup red pepper, cut into 1” pieces
  • 14.5 ounces black beans, rinsed and drained
  • ½ cup frozen yellow corn, thawed and drained
  • 3 Tablespoons honey
  • 3 Tablespoons lime juice
  • 3 Tablespoons fresh cilantro, chopped
  • Corn or flour tortillas
  • Guacamole, salsa, sour cream, cheese, etc.

Instructions

  1. Preheat the oven to 425°F. Grease a baking sheet with olive oil.
  2. In a large bowl, toss cubed sweet potatoes with 3 tablespoons olive oil and spices until coated.
  3. Spread sweet potatoes on the baking sheet and roast for 20 minutes.
  4. Add green and red peppers to the same bowl, coat with remaining olive oil, salt, and pepper.
  5. Combine roasted sweet potatoes and peppers on the baking sheet; roast another 20 minutes.
  6. Mix honey, lime juice, and cilantro in a small bowl to create the sauce.
  7. Stir in black beans and corn with roasted veggies; drizzle with sauce and roast for an additional 10-15 minutes.
  8. Serve immediately in tortillas or over salad greens.
