  • ¼ cup unsalted butter, melted
  • 2 tbsp granulated sugar
  • 16 oz cream cheese, softened
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ¼ cup sour cream
  • Pinch of salt
  • 1 can (21 oz) cherry pie filling
  • Optional: dark chocolate shavings or curls for garnish
  • Optional: whipped cream for serving

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. Line a 9×9-inch baking pan with parchment paper.
  3. In a bowl, mix chocolate cookie crumbs, melted butter, and granulated sugar; press into the bottom of the pan.
  4. Beat cream cheese and sugar in another bowl until smooth. Add eggs one at a time, then stir in vanilla, sour cream, and salt.
  5. Pour the cheesecake mixture over the crust and spread evenly.
  6. Bake for 25–30 minutes until set but slightly jiggly in the center.
  7. Cool completely before refrigerating for at least four hours. Top with cherry pie filling before serving.
