  • ½ cup white sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 ¼ cups flour + 2 tbsp flour (divided)
  • ½ tsp baking soda
  • 1 tsp salt
  • 3 cups quick oats
  • 1 cup white chocolate chips
  • 1 cup quartered blackberries

Instructions

  1. Preheat your oven to 325°F (163°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together the softened butter, light brown sugar, and white sugar until smooth.
  3. Beat in the eggs one at a time, then mix in the vanilla extract.
  4. In another bowl, whisk together 1 ¼ cups of flour, baking soda, and salt; gradually add this to the creamed mixture until just combined.
  5. Gently fold in the oats and white chocolate chips.
  6. Coat the blackberries in the remaining flour before folding them into the dough carefully.
  7. Scoop rounded portions onto the prepared baking sheet.
  8. Bake for about 12-13 minutes until lightly golden around the edges.
  9. Allow cookies to cool on the baking sheet for 5-7 minutes before transferring to a wire rack.
