  • 5 egg whites
  • 1 1/4 cup granulated sugar
  • 2 cups blackberries
  • 1/4 cup sugar (or sweetener like maple syrup)
  • 1 1/2 cups cold heavy cream
  • 2 tbsp cornstarch
  • 2 tsp lemon juice
  • a few drops purple food coloring
  • 2 tbsp water

Instructions

  1. Preheat the oven to 250°F (120°C) and line a baking sheet with parchment paper.
  2. In a stand mixer, whip egg whites until soft peaks form. Gradually add granulated sugar until stiff peaks form. Fold in food coloring, cornstarch, and lemon juice.
  3. Spoon or pipe meringue onto the prepared baking sheet, creating slight indentations for filling.
  4. Bake for about 60 minutes until dry. Turn off the oven and let cool inside with the door ajar.
  5. For the blackberry filling, combine blackberries, sugar, lemon juice, cornstarch, and water over medium heat until thickened; cool completely.
  6. Whip heavy cream with powdered sugar and vanilla until soft peaks form.
  7. Assemble by spooning blackberry filling into meringue shells and topping with whipped cream.
