Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 cup semi-sweet chocolate chips
  • 1 tablespoon vegetable oil

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, cream the softened butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition, then stir in vanilla.
  3. In another bowl, combine flour, baking powder, baking soda, and salt. Gradually add this mixture to the wet ingredients on low speed until just combined.
  4. Chill the dough for at least 30 minutes before dropping rounded dough balls onto prepared baking sheets, spacing them about 2 inches apart.
  5. Bake for 10–12 minutes until edges are golden; cool on wire racks.
  6. Whip heavy cream with powdered sugar and vanilla until stiff peaks form; refrigerate.
  7. Melt chocolate chips with vegetable oil in the microwave until smooth.
  8. Assemble cookies by spreading whipped cream between two cookie halves and drizzle or dip in chocolate glaze.
