  • 1011 strips cooked turkey
  • 2 heads broccoli (about 1 and 1/2 pounds or 56 cups)
  • 1 cup dried cranberries
  • 1/3 cup roasted and salted sunflower seeds
  • 1 cup shredded cheddar cheese
  • 1/3 cup chopped red onion
  • 1 & 1/4 cups mayonnaise or Miracle Whip
  • Zest of 1 lemon
  • 1 tablespoon lemon juice
  • 2 tablespoons white apple vinegar
  • 1/4 cup sugar
  • 1 & 1/4 teaspoons kosher salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon dry mustard
  • 1/8 teaspoon cayenne pepper

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Arrange turkey on the baking sheet and bake for about 15 minutes until crispy. Let cool and chop into bite-sized pieces.
  3. In a large mixing bowl, whisk together mayonnaise or Miracle Whip, lemon zest, lemon juice, vinegar, sugar, salt, pepper, dry mustard, and cayenne pepper.
  4. Chop the broccoli into small florets and add to the bowl along with cranberries, sunflower seeds, cheese, and most of the turkey (reserve some for topping).
  5. Stir until well combined. Chill for at least one hour before serving for best results.
