  • 1 teaspoon baking soda
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon kosher salt
  • 5 Tablespoons unsalted butter (softened)
  • 3/4 cup light brown sugar (packed)
  • 2 Tablespoon cake flour
  • 3 Tablespoons unsalted butter (melted and cooled)
  • 2 1/2 Tablespoon milk

Instructions

  1. Cream together the unsalted butter, granulated sugar, and brown sugar until light and fluffy. Add eggs and vanilla; mix well.
  2. In a separate bowl, combine cake flour, cornstarch, baking soda, baking powder, and salt; gradually add to wet ingredients until just combined.
  3. Chill the dough for one hour in the refrigerator.
  4. Preheat oven to 350°F (175°C) and prepare baking sheets with parchment paper.
  5. Prepare the filling by mixing softened butter, brown sugar, cinnamon, and cake flour until smooth.
  6. Form cookies by placing a ball of filling between two layers of cookie dough; seal edges.
