  • 1 teaspoon baking powder
  • 2 cups powdered sugar
  • 1/4 cup butterscotch syrup
  • 1/2 teaspoon vanilla extract
  • 12 tablespoons heavy cream
  • Harry Potter-inspired sprinkles

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. In a large bowl, cream together softened butter, granulated sugar, and brown sugar until smooth.
  3. Add the egg and vanilla extract; mix well.
  4. In another bowl, combine flour, baking powder, and salt. Gradually add to the wet mixture.
  5. Scoop dough into balls using a cookie scoop and flatten them slightly on the baking sheet.
  6. Bake for 12–13 minutes until lightly golden. Allow cooling on a rack.
  7. For frosting, beat together another portion of softened butter, powdered sugar, vanilla extract, and heavy cream until fluffy. Mix in butterscotch syrup.
  8. Pipe frosting onto cooled cookies and decorate with sprinkles.
