  • 60 grams granulated sugar
  • 110 grams almond flour (sifted)
  • 200 grams powdered sugar (sifted)
  • 12 drops red food coloring
  • 113 grams unsalted butter (room temperature)
  • 180 grams powdered sugar
  • 60 grams salted caramel

Instructions

  1. For the apple pie filling, melt unsalted butter in a saucepan, add diced apples and cinnamon, cooking until soft. Stir in salted caramel and let cool.
  2. Preheat the oven to 150°C (300°F). Whisk egg whites and cream of tartar until frothy; gradually add granulated sugar until stiff peaks form. Fold in sifted almond flour, powdered sugar, and red food coloring.
  3. Pipe small circles on parchment-lined baking sheets and let rest for 30 minutes until they form a skin. Bake for 15 minutes.
  4. For the buttercream, beat room temperature unsalted butter until creamy; mix in powdered sugar and salted caramel until smooth.
  5. Assemble by pairing macaron shells with buttercream and apple filling.
