  • 1/2 cup Mexican crema or sour cream
  • 1/2 cup mayonnaise
  • 4 cups shredded cheese (Mexican blend preferred)
  • 1 serrano or jalapeno pepper (diced)
  • 23 tablespoons lime juice
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Preheat your oven to 400°F (200°C) and spray a baking dish with cooking spray.
  2. In a mixing bowl, combine corn, crema/sour cream, mayonnaise, 2 cups of cheese, diced pepper, lime juice, chili powder, paprika, salt, and pepper. Mix until well combined.
