  • 2 cups cooked chicken breast, shredded
  • 1 cup shredded sharp cheddar cheese
  • 12 diced jalapeños (seeded for less heat)
  • 2 tbsp ranch seasoning
  • 1/4 cup cream cheese, softened
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika, optional
  • Salt & black pepper, to taste
  • 1 cup flour
  • 2 eggs, beaten
  • 1.5 cups breadcrumbs or panko
  • Neutral oil for frying
  • 1/2 cup mayo
  • 1/4 cup sour cream
  • 1 tbsp ranch dressing or seasoning
  • 1/2 tsp garlic powder
  • 1 tsp lemon juice or white vinegar
  • 1 tbsp chopped parsley
  • Red pepper flakes, to taste
  • Salt & pepper, to taste

Instructions

  1. In a mixing bowl, combine shredded chicken, cheddar cheese, jalapeños, ranch seasoning, cream cheese, garlic powder, and spices until well mixed.
  2. Form the mixture into small balls or patties and chill on a lined baking sheet for 15–20 minutes.
  3. Set up a breading station with bowls of flour, beaten eggs, and breadcrumbs.
  4. Coat each popper in flour first, then dip in eggs and roll in breadcrumbs.
  5. Heat oil to 350°F (175°C) in a deep frying pan and fry the poppers for about 3–4 minutes per side until golden brown.
  6. Remove from oil and drain on paper towels.
  7. In a separate bowl, mix all dip ingredients—mayo, sour cream, ranch dressing, garlic powder, lemon juice, chopped parsley, red pepper flakes, salt & pepper. Mix well and chill until ready to serve.
