  • 1 large egg yolk
  • 1/2 cup canned pumpkin (blotted)
  • 2 tsp vanilla extract
  • 1/2 tsp maple extract (optional)
  • 1/2 cup granulated sugar for coating
  • 1/2 tsp pumpkin or chai spice blend for coating

Instructions

  1. Prepare brown butter by melting it in a saucepan over medium heat until browned; cool.
  2. Blot canned pumpkin with paper towels to remove excess moisture.
  3. In a bowl, whisk together flour, spice blend, baking soda, and salt.
  4. In another bowl, mix cooled brown butter, brown sugar, and maple syrup; add egg yolk and blotted pumpkin.
  5. Combine wet and dry ingredients until just mixed; chill dough for at least 8 hours.
  6. Preheat oven to 350°F (177°C) and line baking sheets with parchment paper.
  7. Roll chilled dough into balls, coat in spiced sugar mix, and place on sheets.
  8. Bake for 12–14 minutes; let cool before serving.
