  • 2 Tbsp avocado oil
  • 1 cup diced boneless skinless chicken breasts
  • 1/2 cup diced yellow onion
  • 2 cloves garlic, minced
  • 1 tsp minced fresh ginger
  • 1 cup fresh pineapple chunks
  • 3/4 cup frozen peas and carrots (thawed)
  • 3 cups cooked jasmine rice
  • 2 Tbsp reduced sodium soy sauce
  • 2 green onions, diced

Instructions

  1. Prepare all ingredients by dicing the chicken, onion, garlic, ginger, pineapple, and green onions. Thaw peas and carrots if frozen.
  2. In a wok or large skillet over medium-high heat, heat 1 tablespoon of avocado oil. Add chicken seasoned with salt and pepper; stir-fry until fully cooked (5-7 minutes). Remove chicken from the pan.
  3. In the same skillet, add another tablespoon of avocado oil and sauté onions, garlic, and ginger until fragrant (2-3 minutes).
  4. Add pineapple chunks and thawed peas and carrots; stir for another minute before incorporating cooked jasmine rice.
  5. Pour in soy sauce and toss everything together until well coated. Fold in chicken and garnish with green onions before serving warm.
