Chicken Zucchini Stir Fry is a delicious and quick dish that combines tender chicken with fresh zucchini, all tossed in a flavorful marinade.   • 1 lb boneless chicken thigh, cut into bite-sized pieces
  • 1 teaspoon cornstarch
  • 1/4 cup light soy sauce
  • 1 teaspoon sesame oil
  • 2 teaspoons sugar (or honey)
  • 1 tablespoon rice apple vinegar (optional)
  • 3 cloves garlic, smashed
  • 1 medium zucchini, sliced
  • 1 tablespoon cooking oil
  • 1 tablespoon oyster sauce (or plant-based alternative)

Instructions

  1. Marinate the chicken by combining it with cornstarch, soy sauce, sesame oil, sugar (or honey), vinegar (if using), and garlic in a bowl. Let it sit for at least 30 minutes.
  2. Heat cooking oil in a wok or large frying pan over medium-high heat.
  3. Add garlic and marinated chicken to the pan along with the marinade. Stir-fry for about 2 minutes until the chicken is no longer translucent.
  4. Remove the chicken from the pan and set aside while keeping some sauce in the pan.
  5. Add sliced zucchini to the pan and stir-fry for about 5 minutes until tender.
  6. Return the chicken to the pan along with oyster sauce and stir everything together for another 2-3 minutes until fully cooked.
  7. Serve hot over rice or noodles.
