  • 22 1/2 lbs. skin-on chicken thighs
  • 1/2 cup fresh lime juice
  • 3 teaspoons fresh lime zest
  • 1/4 cup olive oil
  • 4 tablespoons fresh cilantro (chopped)
  • 2 jalapeños (chopped)
  • 4 cloves garlic (chopped)
  • 1 tablespoon honey
  • 2 teaspoons salt
  • 1 teaspoon chili powder

Instructions

  1. Rinse the chicken thighs under cold water and pat dry.
  2. In a mixing bowl, whisk together lime juice, zest, olive oil, cilantro, jalapeños, garlic, honey, salt, and chili powder until well combined.
