  • 6 day-old croissants
  • 9 ounces dark chocolate (chopped)
  • 1/2 cup almond flour
  • 1/2 cup salted butter (softened)
  • 1/4 cup sugar
  • 2 tablespoons whole milk
  • 1 large egg
  • 1 egg yolk
  • powdered sugar (for dusting)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a saucepan, combine 1/4 cup sugar and 1/4 cup water over medium heat until dissolved. Remove from heat and stir in almond extract.
  3. In a bowl, cream together softened butter and granulated sugar until light and fluffy. Gradually mix in almond flour.
  4. Prepare the egg wash by whisking together the egg, egg yolk, vanilla extract, almond extract, and milk.
  5. Slice each day-old croissant lengthwise without cutting all the way through. Spread the almond mixture inside and add chopped dark chocolate.
  6. Brush the tops with egg wash, sprinkle sliced almonds on top, and bake for about 15 minutes or until golden brown.
  7. Dust with powdered sugar before serving.
