  • 1/4 cup cashew butter (or almond/sunflower seed butter)
  • 23 tbsp milk (dairy or non-dairy)
  • 1/4 cup mini chocolate chips
  • 2 tbsp honey or maple syrup
  • 1 tsp vanilla extract
  • Pinch of salt
  • 1 cup milk chocolate chips
  • 1 tsp coconut oil (or vegetable oil)

Instructions

  1. In a medium bowl, whisk together almond flour, protein powder, and salt.
  2. In another bowl, mix cashew butter with 2 tbsp milk, honey/maple syrup, and vanilla extract until smooth.
  3. Combine wet ingredients with dry ingredients and mix well.
  4. Fold in mini chocolate chips evenly.
  5. Adjust consistency with remaining milk if too dry.
  6. Roll mixture into 1-inch balls and place on parchment-lined plate.
  7. Refrigerate for at least 30 minutes to firm up.
  8. Melt chocolate chips with coconut oil in intervals in the microwave until smooth.
  9. Dip each ball in melted chocolate and sprinkle with additional mini chocolate chips.
  10. Chill again until set before serving.
