  • 3 ¼ cups Bread flour
  • 1 cup Whole milk (cold)
  • 2 ¼ tsp Active dry yeast
  • ¼ cup Granulated sugar
  • 1 tsp Fine sea salt
  • 3 tbsp Unsalted butter (softened)
  • 1 cup European-style butter (cold)
  • 8 oz Dark chocolate bars (chopped)
  • 1 tbsp All-purpose flour (to stabilize butter block)
  • ½ cup Semi-sweet chocolate (optional for mix)
  • 1 Egg wash (1 egg + 1 tbsp water)
  • 1 tbsp Coarse sugar (optional for sparkle)

Instructions

  1. In a bowl, mix bread flour, sugar, salt, and yeast. Add cold milk and softened butter; mix until a shaggy dough forms.
  2. Knead on a floured surface for 5–7 minutes until smooth. Place in a greased bowl, cover, and chill for at least 2 hours.
  3. Prepare the cold butter block by pounding it between parchment paper until it forms a rectangle.
  4. Roll chilled dough into a large rectangle, place the butter block in the center, and fold to enclose it completely.
  5. Roll out again and fold into thirds; repeat this process three times with chilling intervals.
  6. Shape the croissants by cutting triangles from the dough, adding chopped chocolate at the base, and rolling tightly.
  7. Proof at room temperature for 2–3 hours until puffed up.
  8. Preheat oven to 400°F (200°C). Brush with egg wash and sprinkle coarse sugar if desired before baking for 18–22 minutes.
