  • c. + 2 tbsp. all-purpose flour
  • 1 tsp. salt
  • ½ tsp. baking soda
  • ½ tsp. cream of tartar
  • 1 c. (2 sticks) butter, room temperature
  • c. granulated sugar
  • ¾ c. powdered sugar
  • ¾ c. canola oil
  • 1 tsp. vanilla extract
  • ½ tsp. peppermint extract
  • 2 eggs, room temperature
  • ¼ c. red jimmies sprinkles
  • 1 c. dark chocolate
  • 1 c. heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large mixing bowl, whisk together flour, salt, baking soda, and cream of tartar.
  3. In another bowl, cream butter with granulated and powdered sugars using an electric mixer until fluffy.
  4. Mix in canola oil, vanilla extract, and peppermint extract until combined; add eggs one at a time.
  5. Gradually incorporate dry ingredients into the wet mixture until just combined.
  6. Scoop tablespoon-sized portions onto the prepared baking sheets and top each with red jimmies.
  7. Bake for about 10 minutes or until edges are lightly golden.
  8. For the ganache topping: heat dark chocolate and heavy cream in a small saucepan over low heat until smooth.
  9. Cool cookies completely before drizzling ganache on top and adding mini peppermint bark squares.
