  • 2 salmon fillets (about 150g each)
  • 1 cup canned coconut milk
  • 1 tbsp olive oil
  • Juice and zest of 1 lime
  • 1 garlic clove, minced
  • Salt, pepper, and paprika to taste
  • 1 tsp curry powder or turmeric
  • 1 tbsp honey or maple syrup
  • 1 cup cooked jasmine rice
  • 1 cup halved cherry tomatoes
  • Extra cilantro for garnish

Instructions

  1. Season salmon fillets with salt, pepper, and paprika.
  2. Heat olive oil in a skillet over medium heat and sear the salmon for 3–4 minutes on each side until golden brown. Remove from skillet.
  3. In the same skillet, sauté minced garlic briefly until fragrant.
  4. Add coconut milk, lime zest and juice, curry powder, and honey; simmer for 2–3 minutes.
  5. Return salmon to the skillet, spoon sauce over it, and simmer for another minute.
  6. Serve over jasmine rice topped with cherry tomatoes and cilantro.
