Instructions

  1. In a large mixing bowl, combine flour, sugar, and salt until mixed.
  2. Add cold cubed butter; blend until it resembles coarse crumbs.
  3. Pour in cold water and vanilla extract; mix until a dough forms.
  4. Wrap the dough in plastic wrap and refrigerate for 30 minutes.
  5. Roll the chilled dough on a floured surface into a rectangle about 1/4 inch thick.
  6. Fold the dough into thirds like a letter, then roll out again into a rectangle.
  7. Repeat this folding and rolling process two more times for flaky layers.
  8. Preheat your oven to 375°F (190°C).
  9. Cut the rolled-out dough into triangles and place chocolate chips at the base of each triangle before rolling them from base to tip.
  10. Arrange rolled croissants on parchment-lined baking sheets and bake for 25 minutes or until golden brown.
