  • 12 oz fresh cranberries (or equivalent cranberry sauce)
  • 1 cup sugar (divided)
  • 3/4 cup water
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup room temperature butter
  • 1 beaten egg

Instructions

  1. In a saucepan, combine cranberries, 1 cup sugar, and water. Cook over medium heat for about 15 minutes until thickened. Let cool.
  2. Preheat oven to 350°F (175°C). In a mixing bowl, stir together flour, remaining sugar, baking powder, and salt. Cut in butter until crumbly, then mix in the beaten egg.
  3. Press half of the dough into a greased 9×13 pan as the bottom crust. Spread cooled cranberry filling evenly over it and top with remaining crumb mixture.
  4. Bake for approximately 40 minutes or until golden brown on top. Allow to cool completely before slicing.
