  • 1/4 cup liquid coconut oil
  • 1/4 cup sour cream (or Greek yogurt)

  • 2 teaspoons cinnamon
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon ground nutmeg
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • pinch salt (optional and to taste)
  • 4 ounces softened brick-style cream cheese
  • 1/4 cup granulated sugar for filling
  • 3 tablespoons all-purpose flour for filling

Instructions

  1. Preheat your oven to 350°F and prepare a 9×5-inch loaf pan.
  2. In a large bowl, whisk together the egg, pumpkin puree, brown sugar, granulated sugar, coconut oil, sour cream, vanilla extract, cinnamon, pumpkin pie spice, and nutmeg until well combined.
  3. Gently fold in the all-purpose flour, baking powder, baking soda, and optional salt until just combined.
  4. Pour two-thirds of the batter into the prepared loaf pan and smooth the top.
  5. In another bowl, mix the cream cheese filling ingredients until smooth. Spread evenly over the batter in the pan.
  6. Top with the remaining pumpkin batter and smooth gently.
  7. Bake for about 48 minutes or until golden brown and set in the center.
  8. Allow to cool in the pan for 15 minutes before transferring to a wire rack to cool completely before slicing.
