  • 1/4 cup fresh squeezed lemon juice
  • 1 Tablespoon Califia unsweetened almond milk
  • 1/4 cup loosely packed fresh parsley
  • 3/4 cup olive oil
  • 1 Tablespoon rice vinegar
  • 1 Tablespoons minced shallots
  • pinch of salt
  • 4 slices pineapple
  • 1 avocado, sliced
  • 1 corn on the cob
  • 1/2 cup pepitas
  • 1 cup fresh blueberries
  • 1 Tablespoon olive oil
  • 23 cups fresh mixed greens

Instructions

  1. For the dressing: In a mason jar, combine orange juice, lemon juice, almond milk, olive oil, rice vinegar, minced shallots, and salt. Blend with an immersion blender until smooth.
  2. Preheat the grill to medium-high heat. Brush pineapple slices with olive oil.
  3. Grill the pineapple for about 2 minutes per side until caramelized. Grill corn for 5 minutes per side until charred.
  4. In serving bowls, layer mixed greens as the base. Top with grilled pineapple slices, corn kernels (cut from cob), avocado slices, pepitas, and blueberries.
  5. Drizzle generously with creamy citrus dressing before serving.
