  • 1 tbsp fresh ginger, grated
  • 2 tbsp red curry paste
  • 1 tsp ground turmeric
  • 1 tsp paprika
  • 1 tsp ground coriander
  • 1 tbsp brown sugar
  • 1 can (13.5 oz) full-fat coconut milk

Instructions

  1. Heat a heavy-bottomed pot over medium heat. Add oil if desired and sauté the onion until translucent (about 5 minutes). Stir in garlic and ginger; cook for another minute.
  2. Increase heat to medium-high and brown the beef cubes in batches (about 5-7 minutes).
  3. Stir in red curry paste, turmeric, paprika, coriander, and brown sugar. Pour in coconut milk; mix well.
  4. Bring to a gentle simmer, reduce heat to low, cover slightly ajar, and let simmer for about 45 minutes until beef is tender.
  5. Serve over prepared rice with fries on the side.
