  • 1 cup tomato puree
  • 1 cup chicken broth
  • Juice of lime
  • ½ cup plain yogurt or cream (optional for extra richness)
  • Fresh cilantro, chopped for garnish
  • Fluffy basmati rice for serving

Instructions

  1. Gather all ingredients. Chop the onion, mince the garlic, grate the ginger, and cut the chicken into bite-sized pieces.
  2. In a large skillet over medium heat, add vegetable oil or ghee. Sauté the onion until soft and translucent (about 5 minutes). Add minced garlic and grated ginger; cook for another minute until fragrant.
  3. Stir in curry powder or garam masala, turmeric, ground cumin, cayenne, salt, and pepper. Cook for about 2 minutes to release flavors.
  4. Add chicken pieces to coat them in spices and cook until browned on all sides (about 5-7 minutes).
  5. Pour in coconut milk, tomato puree, chicken broth, and lime juice. Stir to combine gently.
  6. Bring to a gentle boil; reduce heat to low and cover. Let simmer for about 20 minutes until chicken is cooked through.
  7. If desired, stir in yogurt or cream before serving for added richness.
