  • 1 can diced tomatoes
  • 4 cups chicken or beef broth
  • 1 cup small pasta
  • 1/2 cup heavy cream
  • Fresh spinach or basil
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped (optional)

Instructions

  1. In a mixing bowl, combine ground beef, breadcrumbs, Parmesan cheese, egg, minced garlic, Italian seasoning, salt, black pepper, and parsley. Mix gently and form into meatballs.
  2. Heat olive oil in a large pot over medium heat. Brown meatballs on all sides; set aside.
  3. Sauté diced onion, garlic, and celery in the same pot until softened.
  4. Stir in diced tomatoes and broth; bring to a simmer.
  5. Add pasta and cooked meatballs; cook until pasta is tender.
