  • 3 lb chuck roast (trimmed if needed)
  • 2 tbsp steak seasoning
  • 1 tbsp dried thyme
  • 1 cup beef broth
  • ⅓ cup water
  • 1 tbsp cornstarch
  • Optional: 2 lbs potatoes
  • Optional: 1 lb carrots
  • Optional: 1 yellow onion

Instructions

  1. Coat the roast with oil and season both sides generously with steak seasoning and thyme.
  2. In a skillet over high heat, sear each side of the roast for 2-3 minutes until browned.
  3. Pour beef broth into the skillet, simmer for one minute, then scrape up any browned bits. Add this liquid to the slow cooker.
  4. If using vegetables, wash, peel, and cut them into large pieces. Drizzle with oil and season before placing on top of the roast.
  5. Slow cook on low for 7-8 hours or high for 3.5-4 hours until tender.
  6. For thickening gravy, dissolve cornstarch in water and stir into the slow cooker during the last hour of cooking.
  7. Serve warm by slicing or shredding the meat.
