  • 2 cups unsalted butter (cold)
  • 8 ounces high-quality chocolate batons
  • 1 large egg (for egg wash)
  • 1 tablespoon milk (for egg wash)
  • Confectioners' sugar (optional for dusting)

Instructions

  1. In a mixing bowl, combine flour, sugar, salt, and yeast. Gradually add cold milk and mix until a dough forms. Knead for about 5-7 minutes until smooth.
  2. Place cold butter between parchment paper and roll into a rectangle about ½ inch thick; chill while resting the dough.
  3. Roll out rested dough into a rectangle twice the size of the butter layer and place chilled butter in the center.
  4. Fold dough over to encase butter and seal edges. Roll out again into an elongated rectangle, fold into thirds to create layers. Repeat this process two more times.
  5. Roll final dough into a large rectangle, cut into triangles, place chocolate batons at the wide end, and roll towards the tip to shape croissants.
  6. Place shaped croissants on baking sheets and allow them to rise until doubled in size.
  7. Preheat oven to 375°F (190°C). Brush with egg wash and bake for about 20 minutes until golden brown.
