  • 1 Tablespoon active dry or instant yeast
  • 1.5 cups cold whole milk
  • 1.5 cups unsalted butter (softened for layering)
  • 2 Tablespoons all-purpose flour (for filling)
  • 1 large egg (for egg wash)
  • 2 Tablespoons whole milk (for egg wash)
  • 4 ounces semi-sweet or bittersweet chocolate

Instructions

  1. In a large bowl, combine flour, sugar, salt, and yeast. Mix well before adding cold milk and softened butter; knead until smooth.
  2. Wrap the dough in plastic wrap and refrigerate for about 6 hours or overnight.
  3. Roll the chilled dough into a rectangle; spread softened butter over two-thirds of it. Fold the unbuttered section over the middle, then fold again to create three layers.
  4. Roll out again into a rectangle, cut into triangles, place chocolate at the wide end, and roll tightly.
  5. Place on a parchment-lined baking sheet to rise until doubled in size (about one hour).
  6. Preheat oven to 400°F (200°C). Brush each croissant with egg wash and bake for approximately 20 minutes until golden brown.
