  • 1 pound Chicken Breast

  • 1 cup Pineapple Juice
  • 1 tablespoon Low-Sodium Soy Sauce
  • 2 tablespoons Honey or Maple Syrup
  • 1 tablespoon Rice Vinegar
  • 2 cloves Garlic (minced)
  • 1 teaspoon Ginger (freshly grated)
  • 1 tablespoon Cornstarch
  • 2 tablespoons Water

Instructions

  1. Prepare by washing and chopping the red bell pepper, mincing the garlic, and grating the ginger.
  2. In a large skillet, heat olive oil over medium heat. Season the chicken with salt and pepper. Cook until browned (5–7 minutes per side). Remove from skillet.
  3. In the same skillet, add red bell pepper, garlic, and ginger. Sauté for 2 minutes until fragrant.
  4. Pour in pineapple juice, soy sauce, honey (or maple syrup), rice vinegar, salt, and pepper; stir to combine.
  5. Create a cornstarch slurry by mixing cornstarch with water in a small bowl; add this mixture to the skillet. Stir continuously until thickened (3–5 minutes).
  6. Return the chicken to the skillet; simmer for 5 more minutes to blend flavors. Serve over rice.
