  • 8 oz macaroni pasta
  • 6 hard-boiled eggs
  • 1/2 cup plain Greek yogurt
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 small red onion, diced
  • 2 celery ribs, chopped
  • Fresh chives, chopped (to taste)
  • Paprika (to taste)
  • Sea salt (to taste)

Instructions

  1. Cook macaroni in boiling water for 8-10 minutes until al dente. Drain and rinse under cold water.
  2. Cut hard-boiled eggs in half; place yolks in a small bowl and chop the whites, adding them to the macaroni.
  3. Mash the yolks until smooth and mix in Greek yogurt, mayonnaise, and Dijon mustard.
  4. Combine all ingredients in a large mixing bowl, stirring until evenly coated.
