4 cod fillets (5–6 oz each)
¼ cup low-sodium soy sauce
1 tbsp sesame oil
2 tbsp honey or maple syrup
1 tbsp rice vinegar
1½ tsp fresh grated ginger
2 cloves garlic (minced)
Optional: green onions and sesame seeds for garnish
Instructions
1. Whisk together soy sauce, sesame oil, honey (or maple syrup), rice vinegar, minced garlic, and grated ginger in a small bowl.
2. Marinate the cod fillets in the mixture for 15–30 minutes in a shallow dish or resealable bag.
3. To bake: Preheat oven to 400°F (200°C). Place marinated cod on a parchment-lined baking dish and bake for 12–15 minutes until it flakes easily with a fork. To pan-sear: Heat oil in a skillet over medium heat and cook each fillet for about 3–4 minutes per side, spooning extra marinade over top while cooking.
4. For an optional glaze, simmer leftover marinade in a saucepan until thickened with cornstarch mixed with water.
5. Serve finished cod garnished with green onions and sesame seeds.
