  • 23 ribs celery, diced
  • 1 medium red bell pepper, chopped
  • 23 cloves garlic, minced
  • 7 cups low-sodium chicken broth
  • 1 can petite diced tomatoes (14.5 ounces)
  • 1½ cups Ditali pasta (or your choice of small pasta)
  • 1½ cups fresh spinach, chopped

Instructions

  1. In a large pot over medium-high heat, crumble and cook the ground Italian sausage until browned. Transfer it to a plate.
  2. In the same pot, add onions, carrots, celery, and bell pepper; sauté until softened (about 5–7 minutes). Stir in garlic and seasonings.
  3. Return the sausage to the pot along with chicken broth and diced tomatoes; bring to a boil then reduce heat and simmer for 10–15 minutes.
  4. Stir in pasta and cook until al dente (about 10 minutes).
  5. Add spinach just before serving until wilted.
