EASY Pasta Fagioli recipe (Pasta Fazool) is a heartwarming soup that combines tender pasta and hearty beans, creating a comforting dish perfect for any occasion.
2 cans white kidney beans (19 oz or 540 ml), drained and rinsed
1 bay leaf
1 cup ditalini or other small pasta (uncooked)
2 cups freshly chopped spinach or kale
¼ cup grated Parmesan cheese
Instructions
In a large Dutch oven, heat olive oil over medium-high heat. Add chopped turkey strips and cook until lightly browned.
Stir in carrots, celery, and onion; cook until translucent.
Add minced garlic, tomato paste, Italian seasoning, salt, and pepper; cook for 1–2 minutes.
Pour in the broth and diced tomatoes along with white kidney beans, bay leaf, and Parmesan rind. Bring to a simmer then cover and cook for about 10 minutes.
Add ditalini pasta; cover again until al dente according to package instructions.
Just before serving, stir in chopped spinach or kale.
